Lodz-based SPINAKER alfa fund has invested in Better Egg, a Polish company that brings innovation on the plant food market. The startup develops a vegetable substitution for scrambled eggs, MamStartup reports.
- The project by the Better Egg company involves the development and implementation of a vegetable substitute for eggs. It is a liquid product (ready to be fried, stored, refrigerated), which, after heat treatment, has with similar texture and taste.
- The substitution is replicating plant protein-hydrocolloid structures that faithfully imitate the structure of eggs. It enables vegetarians, vegans, and people with chicken-related allergies to have traditional tasty breakfasts without harming animals.
- The investment was carried out by the SPINAKER alfa fund as part of the BRIdge Alfa action, co-financed by the National Center for Research and Development.
